The spices used depend on the recipe and regional traditions. After baking, gingerbreads cookies require proper hydration and, for example, chocolate covering which ensures their softness and long shelf live.

For the production of this type of cookies, " cylinder forming" machines are used by extruding shapes from the forming roller. On these machines, you can get cookies of a wide variety of shapes and patterns, with embossing, drawings, logos, etc. depending on the specific needs of the customer.
